Press the base
Graham crumb, a touch of cane sugar, browned butter. Pressed to a uniform 6mm and blind-baked to 165°C.

Fold the custard
Fresh key lime juice, egg yolk, and condensed milk folded by hand until the ribbon holds for four seconds.

Set cold, not hot
Set at 4°C for six hours rather than baked hard. It keeps the custard bright, silky, and just tart enough.

Finish and ship
A thin ring of unsweetened cream, boxed in recyclable board, and shipped cold within 48 hours of baking.

Every order ships cold in an insulated, recyclable box with a compostable ice pack. Pies leave within 48 hours of baking and arrive in 1–2 days.
How long does it keep?+
Refrigerated, a whole pie holds its texture for five days. The custard is cold-set, not frozen, so we don't recommend freezing.
Do you ship nationwide?+
Yes — we ship to all 48 contiguous states. Cold shipping is included on subscriptions and on orders over $60.
Is it really just five ingredients?+
